Puzzle explanation

The extra letters in wordplay spelt out “(There is) more food in a pennyworth of bread than in a gallon of (ale)”, from the Malt Liquor Lecture given to a Preston Temperance Society meeting in 1833 by campaigner JOSEPH LIVESEY (highlighted in the diagonal; entries with just LIVESEY highlighted were accepted). The same meeting was where Richard Turner gave a speech describing his “tee-total” abstinence, after which the word was adopted by the movement. Six answers containing an alcoholic drink had it removed to make a real word for the grid entry.
