Puzzle explanation

The extra letters from clues could be rearranged to form PIG LATIN. The eight thematic entries were pig Latin forms of four-letter words linked to pig in The Chambers Dictionary. The entry ESSAY needed to be changed to USSAY, which is pig Latin for “sus” (the Latin for “pig”, found in the etymologies of “sow”, “swine” et al in Chambers), thereby revealing PORCUS, another Latin word for “pig” (found in the etymologies of “pork”, “porcine” et al). The title was an anagram of INESWAY, “swine” rendered in pig Latin.
