Puzzle explanation
The corrections to clue misprints were a jumble of CRAPPIT-HEID, a haddock’s head stuffed with a mixture of oatmeal, suet, onions and pepper. The grid replacements spelt out SPANAKOPITA, for which the ingredients FETA and FILO appear in the grid. The discarded letters make SPINACH (the other ingredient) and UP TO (from the title). The highlighted ORACH (a spinach substitute) and ABOUT (up to, ie, engaged in doing) form the figure 11 in the grid, which is the number of thematic substitutions.
